2-3 carrots, sliced
1 stalk celery, sliced
½ onion, sliced
2 cloves garlic, minced
5 cups vegetable broth
1 cup water
1x 400g tin of diced tomatoes
1 potato, diced
1 teaspoon Italian seasoning
1 cup alphabet noodles
2 tablespoons olive oil
Salt and pepper
Bunch of parsley
In a large pot or skillet over medium heat, add olive oil and saute carrots, potato, celery, onion and garlic until softened.
Add broth, water, tinned tomatoes and seasonings. Bring to a boil and turn down and simmer for 15 minutes.
Add alphabet noodles and cook for another 7 minutes or until noodles are cooked.
Serve into bowls and top with parsley.
