Ingredients

1 cup dried apricots
2/3 cup desiccated coconut
½ cup almond meal
2 tablespoons maple syrup
1 tablespoon chia seeds
2 tablespoons water
4 tablespoons to coat balls in

Method

In a food processor or blender, blend the apricots until they are finely chopped.

Add the coconut, almond meal, maple syrup, chia and water and blend until well combined.

Check the mixture and blend in a small amount of water if the mixture is too dry.

Pour mixture into a bowl and take a teaspoon of mixture and roll into small balls.

Add the extra coconut to a small plate and roll balls in the coconut.
