4 pita breads
1/3 cup pizza sauce
2/3 cup shredded cheese
1 tomato, diced
1 orange capsicum, diced – can also use kumara
1 yellow capsicum, diced
1 green capsicum, diced – can use any green vegetable
¼ red onion, diced
Preheat oven to 180 degrees.
Spread pizza sauce onto the pita breads and top with cheese.
Arrange the vegetables in color order.
Place onto an oven tray and bake for 10 minutes. Cut into pieces to serve.
