1 ½ cup rolled oats
2/3 cup shredded coconut
½ cup almond butter
½ cup chocolate chips
¼ cup honey
1 teaspoon vanilla extract
½ teaspoon cinnamon (optional)
Add all ingredients to a mixing bowl and stir until thoroughly combined.
If the mixture is too dry, add a small splash of water and mix again.
Using a tablespoon, scoop the mixture and roll into balls.
The mixture should make approximately 10–12 balls.
Store the Chocolate Energy Bites in an airtight container in the refrigerator for up to 1 week.
