Vegetarian Chili

Prep time: 10 minutes

Cook time: 20 minutes

Serves:  4-6

INGREDIENTS

2 tablespoons olive oil

1x 400g can kidney beans, rinsed and drained

1x 400g can diced tomatoes

1x 400g can black beans

1x 200g can corn

2 garlic cloves, chopped

½ onion, finely chopped

½ teaspoon salt

¼ teaspoon pepper

Juice of 1 lime

Corn chips to serve (optional)

Toppings (optional):

Fresh Parsley

Sour cream or Greek yogurt

Salt

Lime slices

Avocado

METHOD

Heat the oil in a large pot over medium heat. Add the onion, salt and pepper and stir. Cook for 5 minutes or until the onion is soft then add the garlic.

Add the tomatoes, beans and corn and reduce the heat to low and let simmer for 25 minutes, stirring occasionally.

Stir in the lime juice and extra seasoning to serve.

Place into bowls and top with toppings of choice.
