Grilled Cauliflower Steaks

Cook time: 25 minutes

Serves:  4-6

INGREDIENTS

1 large cauliflower

¼ cup olive oil

3 garlic cloves, minced

½ teaspoon salt

¼ teaspoon pepper

½ teaspoon red pepper flakes

¼ teaspoon paprika

Lemon to serve

Handful parsley, chopped to serve

METHOD

Preheat oven to 200 degrees.

Prepare the cauliflower by cutting into large florets and slicing lengthwise so the pieces are flat and place onto an oven tray.

In a small bowl. Combine olive oil, garlic, salt, pepper, red pepper flakes and paprika. Brush with the dressing and roast for 25 minutes, flipping halfway. The cauliflower should be golden and tender.

Top with lemon juice, parsley and yogurt. Serve warm.
