Coconut Bliss Ball Snowmen
 

Celebrate the festive season with these Coconut Bliss Ball Snowmen. A creative way to involve your toddler in the kitchen and a great festive Christmas plate to bring to a family lunch or dinner.

Serves 6 snowmen

YOU WILL NEED

  • 150g raw shredded coconut + 20g for rolling

  • 6 tbsp ground almond meal

  • 3 tbsp unsweetened coconut milk

  • 3 tbsp coconut oil, melted

  • 2 tbsp maple syrup

  • 1/2 tsp vanilla extract

DECORATION:

  • Cake pop sticks

  • Raisins

  • Dried apricots

  • Glitter wires

METHOD

  • Whiz the shredded coconut and almond meal in a food processor or blender.

  • Add the wet ingredients (unsweetened coconut milk, coconut oil, maple and vanilla extract).

  • Scrape down the sides, until the mixture is sticky and well combined.

  • Sprinkle the extra shredded coconut onto a plate, roll the mixture into ball using the palm of your hand and roll into the shredded coconut.

  • Thread three rolled balls onto each stick.

  • Cut the raisins into tiny pieces for the snowman’s eyes and mouth, and the apricots into triangles for the noses.

  • Store in the fridge!
