Chickpea Fritters

Serves:  2
Preparation:  10 minutes       
Cooking:  10 minutes

Ingredients:

  • 1x 400g can chickpeas, rinsed and drained
    ¼ cup all purpose flour

  • ¼ cup grated cheese

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 1 tablespoons water

  • 1 tablespoon fresh parsley, chopped

  • 3 tablespoons olive oil

Toppings:

  • Greek yogurt or sour cream

  • Fresh herbs

Method:

In a medium bowl, combine chickpeas, flour, cheese, garlic powder, salt, pepper, water and parsley. Using a fork, mash ingredients until well blended.

Divide the mixture into 6 parts and shape into patties.

Heat a pan with olive oil over medium heat. Add fritters and cook for 3-5 minutes on each side or until golden.

Serve warm with Greek yogurt or sour cream and fresh parsley.
