Red Lentils, spinach & cheese puree



1 cup red lentils

3/4 cup rice

1 cup spinach

2 tbsp cheese

In a medium pan, combine the lentils and rice and cook for about 15 minutes.
Add stock or water to keep the mixture moist whilst cooking.

Add in spinach and cook for a further 5 minutes. When cooked, drain the liquid off and keep a little aside for the blending process.

Puree the spinach, lentils and rice in a food processor or blender, add a little liquid to get your desired texture and add the cheese for extra flavour !
